Northwest Culinary Academy’s Professional Culinary Arts Diploma curriculum covers the essential techniques required to transform ingredients responsibly, professionally, and creatively with the tools of the kitchen. It also adjusts every semester to reflect changing food sensibilities, values, and artistry. Northwest Culinary Academy’s theory is that a curriculum is like a script – vital as its content may be, its context and delivery will tell the bigger story. And while they are the authors of their curriculum, they allow their students to participate in how it’s told. Many days are multi-themed, requiring the hands and mind to multi-task various learning opportunities. Welcome to the profession of infinite interpretations.
In Northwest Culinary Academy’s Professional Culinary Arts program, students will learn many styles of cuisine: Mediterranean, Middle Eastern, Latino, Asian, classical French, Indian, etc. The common language is techniques, but they also delve into modern and ancient practices. What characterizes Northwest cuisine, or its approach to food, is its open-mindedness to seek and learn and execute new styles regularly.
